Our honey is unheated & unfiltered providing you with a truly raw product, straight from our hives into the bottle, just as the bees made it.

Tasting Notes

Knapweed (Centaurea maculosa) nectar produces an extremely light-colored honey, which becomes nearly white upon crystallization.  Our Knapweed honey has a sharp, floral sweetness with notes of light caramel, anise, fresh herbs with a buttery texture and clean finish.

Wonderful for pairing with pears and firm, nutty cheese (we love it with Manchego), as a sweetener for your tea or coffee, on fresh bread with butter or just by the spoonful.

Our honey is unheated and does crystallize. Depending on the time of year, the honey you receive may be liquid or crystallized. Over time, all of our liquid honey will crystallize.

This unprocessed honey contains beeswax, pollen and propolis. Unprocessed honey may naturally crystallize in the jar but will never spoil when properly stored.

All of our honey is made in Montana by our 2nd-generation beekeeping family using time-honored traditional practices and USDA certified organic hive treatments when necessary. 

Please note raw honey should not be consumed by children under one year of age.
